For Thanksgiving dessert this year, I made caramel apple pie bites. This dish is an inspiration of what is significant to me for this holiday. I love the smell of cinnamon and apple cider in the house…baking apple pie and filling the house with the amazing aroma of the holidays. It reminds me of being a kid and being so excited for thanksgiving & Christmas. There’s a saying: “As American as apple pie”, meaning that apple pie is an American staple. It’s our go-to dessert on the 4th of July and for Thanksgiving. Since I married an Australian this year, and since apple pie is very American, I love making apple pie for the Aussies in my life! I like to bring a little America to Aus.
As for being grateful this year, I’m so grateful that during a year of sadness with losing my father, there have been so many blessings that have touched my life. I got to marry the man of my dreams and that I got to share the wedding with the country. I’m so thankful for my new family of Aussies, my fur family (3 cats, 2 dogs), my wonderful family both here and in the Midwest, and for my Home and Family family. For me, this year gratitude simply means “family”.
We are born into a family, but the people we choose to surround ourselves with become our true family. I am fortunate enough to be surrounded by an amazing biological family. This year in particular, I am grateful for the family I was born with, and miss those that are no longer with us. These are people that I would actually choose to surround myself, and I’m fortunate enough to call those family members friends. Then there is my extended family…those incredible people that I have met throughout the years that have touched me in such a way that I couldn’t imagine my life without them. I’m honored to call them friends, and grateful that they have joined my family.
With that being said I hope you enjoy my Thanksgiving dessert …
Fall Apple Bites
You Will Need:
- vegetable oil
- ready made pie crust
- apple pie filling
- maple syrup
- cinnamon
- sugar
- butter
How To:
- Mix together your pie filling in a medium bowl. Add maple syrup and cinnamon, combine well and set aside.
- Take your pie crust and roll it out.
- Using a round cookie cutter, cut pie crust into circles.
- Place a small amount of pie filling on to your cut pie crust and fold in half. Use your fingers to pinch the edges to seal the crust edges. Repeat this step over and over until you have a mountain full of apple pie bites that are ready to fry!
- Take a large pan and add vegetable oil. Once your oil is hot, VERY, very carefully place several pie bites in the oil to fry. Make sure you use long tongs to turn the pie bites over. Cook until your bites are a light golden brown. It will only take a few seconds each side.
- Line a plate with paper towel and use tongs to remove from pot and place on the plate to cool. Repeat the process until all of your apple pie bites are cooked.
- In a microwave safe bowl, melt butter.
- In a large bowl combine cinnamon and sugar.
- Using a pastry brush coat each side of your pie bites with your melted butter. Roll your butter coated bites in the bowl of cinnamon and sugar until evenly coated.
- Plate up these delicious desserts with a side of vanilla ice-cream and drizzle with caramel syrup and enjoy with your loved ones!
